Carrot Salad with Honey Dijon Dressing

Ever thought about how to take a lot of carrots and transform it into a can’t-quit eating-it Carrot Serving of mixed greens? Simply grind them and hurl with a straightforward yet delicious Nectar Mustard Lemon Dressing!! It includes huge amounts of flavor and makes the carrot “delicious” with a Coleslaw-like surface.

ingredients

4 carrots, medium, stripped

2 green onion stems, finely cut on the corner to corner

1/4 cup parsley, finely hacked (discretionary)

Nectar DIJON MUSTARD DRESSING

1/2 tsp dijon mustard

1 tbsp honey

2 tbsp lemon juice, new

4 tbsp extra virgin olive oil

1/2 tsp salt

1/4 tsp black pepper

Directions

Mesh the carrot utilizes a standard box grater (or the shredder connection of nourishment processor). Focus on strands about 4cm/1.5″ long.
